Why it made the list
When I went looking for American-made tools to put next to the Roselli knives, I wanted small shops that still make things by hand. Brant & Cochran kept coming up, and the more I read about them, the more I wanted one. They forge these one at a time in Maine. After talking with Mark there, I ordered one for myself.

Owning it

Looking after it

Wipe it dry after use and give the blade a thin coat of oil now and then. Carbon steel darkens with use. That gray patina is normal, and it helps protect the blade.
